Un’oasi di pace e benessere immersa nel Chianti Classico più autentico, dove l’essere umano e la natura convivono da millenni al ritmo di una magica e rara armonia. Questa è la prima impressione quando, scendendo dal meraviglioso borgo di Vagliagli, si incontra la delicata insegna in legno con una scritta semplice che profuma di pane appena sfornato: Aiolina. Siamo arrivati, siamo incantati e ci accolgono il sorriso e la gentilezza di Cristina, tra il verde frondoso della vallata e l’azzurro materico del cielo toscano. Un angolo di paradiso, dove bellezza e umanità trovano una sintesi sublime. La freschezza dell’aria porta con sé i profumi densi di tradizioni secolari, la mente trova il tempo di posarsi sui petali del tempo come una farfalla immortale. Qui c’è tutto quello che si possa desiderare: sulla tavola il rosso di un calice di Chianti Classico incrocia il riflesso giallo della pasta fatta in casa, tra i filari dei vigneti, il canto degli uccelli e l’amore di una famiglia per la più antica e magica di tutte le carriere: il Palio di Siena.
Cristina Fassio, la titolare dell’Aiolina, è originaria di San Francisco ma vive a Siena da 25 anni… la nostra curiosità ci spinge a chiederle subito: cosa l’ha portata dalla California alla Toscana?
In America la mia famiglia aveva un ristorante e lavoravamo tanto… ad un certo punto ho deciso di prendermi una pausa, dopo tanti anni avevo voglia di prendermi un po’ di tempo per me e per conoscere il mondo. I miei nonni erano italiani quindi qui avevo radici forti. Sono arrivata a Siena nel 1994 e me ne sono innamorata subito, è stato un colpo di fulmine. Dopo un mese avevo già un lavoro e il mese dopo ho trovato pure un fidanzato. Era destino, mi sono fermata a Siena… perché Siena è Siena, è fantastica.
L’amore per Siena qui si tocca con mano e si respira una grande passione per il Palio…
Si, esatto, siamo contradaioli della Selva e quando siamo arrivati qui abbiamo deciso di chiamare gli appartamenti con i nomi dei cavalli con cui abbiamo vinto il Palio da quando sono nate Gianna e Stella, le nostre figlie: Urban II, Zodiach, Caro Amico, Fedora Saura, Polonski. In più c’è un altro appartamento, quello più grande, a cui abbiamo dato il nome di un cavallo speciale: Panezio. Organizziamo anche per i nostri ospiti delle visite esclusive al Museo della Contrada della Selva. Il nostro legame con la città e la Contrada è fortissimo, per raggiungere Siena da Vagliagli ci vogliono solo 15 minuti e noi ci andiamo spesso… i nostri clienti scelgono l’Aiolina anche per questo: essere nel cuore del Chianti Classico, immersi nella natura, ma al tempo stesso a due passi dal centro storico di Siena, facilissimo da raggiungere. Oltre a Siena, sempre in 15 minuti si raggiungono facilmente sia Radda che Castellina in Chianti.
Prima ci diceva che aveva un ristorante… quindi lei è una cuoca?
Proprio così, sono una cuoca. Qui all’Aiolina infatti organizziamo anche corsi di cucina per i nostri ospiti… ovviamente cucina tipica italiana e toscana! Facciamo la pasta fatta in casa, cene, eventi, pizza party e anche feste della birra, perché mio marito fa la birra artigianale. Abbiamo anche il forno a legna.
Avete anche un orto biologico, vero?
Certo, abbiamo un orto biologico dove i nostri ospiti possono prendere pomodori, insalata, melanzane, peperoni e gli altri ortaggi di stagione… tutti i prodotti che utilizziamo sono freschi e a km zero. Per i rifiuti organici, come le bucce della frutta e i fondi di caffè, abbiamo un compostore biologico a disposizione di tutti. Abbiamo anche cinque capre dolcissime, di cui due piccoline, che fanno parte della famiglia e sono le nostre tosaerba naturali [Cristina sorride, emozionata].
Qui è tutto naturale… anche la piscina?
Sì, quest’anno abbiamo deciso di rinnovare la piscina e investire nel sistema di sterilizzazione al sale, che sostituirà il cloro. Non useremo più nessun prodotto chimico. La natura va rispettata e in un luogo come questo ci è sembrato giusto fare questa scelta, che è ottima anche per la salute e la cura del corpo. Il benessere della persona è uno dei pilastri della nostra filosofia e tra le attività che organizziamo ci sono anche lezioni di yoga.
Rispetto alle misure anti-contagio post emergenza sanitaria? Qui il distanziamento interpersonale non è un problema…
Qui da noi l’emergenza non ci ha praticamente toccato ed ora è passata… e poi non c’è posto migliore dal punto di vista della salute e della sicurezza, non c’è alcun rischio di assembramento, si sta all’aria aperta in mezzo alla natura. Rispetto alle grandi città qui l’isolamento significa relax e benessere, se c’è un turismo sicuro dopo quello che è successo è proprio qui, nel Chianti Classico. Ovviamente garantiamo tutte le misure di sicurezza previste dalla normativa, la struttura è regolarmente sanificata.
Avete sei appartamenti, uno per cavallo… Quante persone possono ospitare?
Abbiamo appartamenti da 2 fino a 5 posti, autonomi e con entrata indipendente, cucina attrezzata e terrazza privata. Cinque di questi hanno anche il camino. Come potete vedere, la vista è bellissima… d’altra parte siamo in uno dei luoghi più belli al mondo. Inoltre abbiamo anche una lavanderia comune senza costi aggiuntivi, con lavatrice, asciugatrice, asse e ferro da stiro.
Siamo nel cuore del Chianti Classico, quindi sicuramente organizzerete anche degustazioni di vini e visite a cantine…
Certo, abbiamo contatti con tutti i produttori della zona e c’è la possibilità di fare sia delle degustazioni qui, sia dei tour nelle cantine… Ad esempio, uno dei tour giornalieri più apprezzati che consigliamo ai nostri ospiti prevede questo programma: la mattina visita a Castellina in Chianti (se è sabato c’è anche il mercato), a seguire degustazioni di vino a Fonterutoli, quindi pranzo da Dario Cecchini a Panzano e nel pomeriggio visita a Radda e, dulcis in fundo, degustazione nella vicina Fattoria di Aiola.
E tour di carattere storico?
Certamente, ad esempio noi consigliamo un “tour etrusco” che riscuote sempre molto interesse, così come la visita a Vertine, forse anche per merito della guida Roberto Bechi, tra le più apprezzate al mondo e collaboratore di Rick Steves. Nel Chianti la storia si respira, è ovunque. Basti pensare che la prima vigna è stata piantata dagli Etruschi e il primo olivo dai Romani… qui il rapporto tra natura e cultura è strettissimo. La stessa struttura dove ci troviamo risale al 1500, quando nasce come abitazione all’interno dei terreni della Fattoria di Aiola.

The freshness of the air brings with it the dense aromas of centuries-old traditions, the mind finds time to rest on the petals of time like an immortal butterfly. Here is everything you could wish for: on the table the red of a glass of Chianti Classico crosses the yellow reflection of homemade pasta, between the rows of vineyards, the singing of birds and the love of a family for the oldest and most magical of all careers: the Palio di Siena.
Cristina Fassio, the owner of Aiolina, is originally from San Francisco but has lived in Siena for 25 years … our curiosity leads us to ask her immediately: what brought you to Tuscany from California?
In America my family had a restaurant and we worked a lot … at a certain point I decided to take a break. After so many years I wanted to take some time for myself and to get to know the world. My grandparents were Italian, from the town of Asti, so I had strong roots here. I arrived in Siena in 1994 and immediately fell in love with it, it was love at first sight. After a month I already had a job and the next month I also found a boyfriend. It was destiny, I stopped in Siena … because Siena is Siena, it is fantastic.
The love for Siena can be felt and you can breathe the great passion for the Palio …
Yes, exactly, we belong to the Contrada of the Selva and when we arrived here at Aiolina, we decided to call the apartments with the names of the horses with which we won the Palio since Gianna and Stella, our daughters, were born: Urban II, Zodiach, Caro Amico, Fedora Saura & Polonski. In addition there is another apartment, the larger one, to which we have given the name of a special horse: Panezio. We also organize for our guests exclusive visits to the Museum of the Contrada della Selva. Our link with the city and the Contrada is very strong, it takes only 15 minutes to reach Siena from Vagliagli and we hop down there almost daily … our customers choose Aiolina for this too: being in the heart of the Chianti Classico, surrounded by nature, but at the same time a stone’s throw from the historic center of Siena, very easy to reach. In addition to Siena, both Radda and Castellina in Chianti are easily reached in 15 minutes.
Before you said that you had a restaurant … so are you a cook?
That’s right, I’m a cook. Here in Aiolina we also organize cooking classes for our guests … obviously typical Italian and Tuscan cuisine! We make homemade pasta, dinners, events, pizza parties and even beer parties, because my husband makes craft beer. We also have a wood burning pizza and bread oven.
You also have an organic garden, don’t you?
Of course, we have an organic garden where our guests can take tomatoes, salad, aubergines, peppers and other seasonal vegetables … all the products we use are fresh and zero km. For organic waste, such as fruit peels and coffee grounds, we have an organic compostor available to everyone. We also have five very sweet goats, two born just this year, who are part of the family and are our natural lawnmowers [Cristina smiles, happy].
Everything is natural here… even the swimming pool?
Yes, this year we decided to renovate the swimming pool and invest in the salt sterilization system, which replaces chlorine. We will no longer use any chemicals. Nature must be respected and in a place like this it seemed right to make this choice, which is also excellent for health and body care. The well-being of the person is one of the pillars of our philosophy and among the activities we organize there are also yoga lessons.
Compared to post-emergency anti-infection measures? Here interpersonal distancing is not a problem …
Here the emergency has hardly touched us and then there is no better place from the point of view of health and safety. There is no risk of gathering, you are in the open air in in the middle of nature. Compared to the big cities, isolation here means relaxation and well-being, if there is safe tourism after what has happened, it is right here, in the Chianti Classico. Obviously we guarantee all the safety measures provided for by the legislation, the structure is regularly sanitized.
You have six apartments, one per horse … How many people can they host?
We have apartments that can accommodate from 2 to 5 people, autonomous and with independent entrance, equipped kitchen and private terrace. Five of these also have a fireplace. As you can see, the view is beautiful and we are in one of the most beautiful places in the world. In addition we also have a common laundry room at no extra cost, with washing machine, dryer, iron and ironing board.
We are in the heart of the Chianti Classico, so do you organize wine tastings and visits to wineries …
Of course, we have contacts with all the producers in the area and we organize both on-site tastings and wine tours with tastings in the cellars … For example, one of the most popular daily tours that we organize is this program: in the morning visit to Castellina in Chianti (if it’s Saturday there is also the outdoor market), followed by wine tastings in Fonterutoli, then lunch at Dario Cecchini in Panzano and in the afternoon visit to Radda and, last but not least, tasting in the nearby Aiola farm.
And historical tours?
Certainly, for example, the Etruscan Tour always receives a lot of interest, as well as the visit to Vertine, perhaps also thanks to our guide Roberto Bechi, among the most appreciated in the world and a collaborator of Rick Steves. In the Chianti we breathe history, it is everywhere. Just think that the first vineyard was planted by the Etruscans and the first olive tree by the Romans … here the relationship between nature and culture is very close. The same structure where we are located dates back to 1500, when it was constructed as a home for the workers of the Aiola winery.
